Hidden benefit to potatoes

The Institute of Food Research says kukoamines occurring naturally in many types of potato may help to reduce blood pressure. The scientists say it was already known that kukoamines are a part of some Chinese herbal treatments, but not that they are found in something as common as the potato. It appears the chemicals, which are also used to treat sleeping sickness, survive boiling but not necessarily frying.
