Microwaves "may be the answer to acrylamide"

Research in Turkey suggests that pre-cooking potatoes in a microwave oven before frying reduces levels of acrylamide, a carcinogenic substance that forms during high-temperature and low-moisture cooking processes. The researchers, at the University of Mersin, publish their results in the Journal of Science of Food and Agriculture.
