New research in rats suggests that black soya beans may help to prevent obesity, reduce cholesterol levels and possibly reduce the risk of diabetes. According to the Journal of the Science of Food and Agriculture, a team in Korea who allowed rats a fatty diet supplemented with various levels of black soya found that after two weeks, the rats getting 10 per cent of their energy from the soya gained half as much weight as those in the control group. The rats? total blood cholesterol and LDL levels fell by 25 per cent and 10 per cent respectively.
