The immune system and the potato

It appears that eating potatoes may have a beneficial effect on the immune system. In a three-month study in pigs a potato-dominated diet led to a significant reduction in levels of white blood cells. Researchers at the Universitat Autònoma de Barcelona say although the pigs were fed raw potatoes, foods that contain resistant starch are likely to have the same effect in humans.
