Dr Tanja Rudolph, of the University Hospital Hamburg-Eppendorf, in Germany, says endothelial function is adversely affected within 2 and 4 hours after eating fast foods, irrespective of their “health” qualities. Dr Rudoph and her colleagues report the finding in The American Journal of Clinical Nutrition.
