The Institute of Food Research says fortifying flour with folic acid may lead to a range of health problems. The practice was approved earlier this year by the Food Standards Agency as a way to reduce birth defects. However, the IFR, reporting in the British Journal of Nutrition, says the liver could easily become saturated by folic acid, which would allow the supplement to enter unmetabolised into the blood, which could cause problems.
