Another look at nitrates and nitrites

Research published in the US journal Proceedings of the National Academy of Sciences suggests both nitrites and nitrates may protect the heart from tissue injury after a heart attack. Dr David Lefer and colleagues at Albert Einstein College of Medicine, in New York, suggest that increasing consumption of nitrite or nitrate rich foods, might provide humans with cardi-oprotective benefits similar to those they have observed in mice.
